The wine world is full of rules that sound authoritative until you look at the science. Oenological myths survive because nobody bothers to correct each other at the dinner table. Some of these you’ve probably heard a thousand times; others maybe not as much.

Here are 12 things that even experienced wine drinkers get wrong.
1. “This wine is too dry for me.”
This might be the single most misused word in wine. When most people say a wine is “too dry,” they mean it’s too tannic, too bitter, or too acidic. But in winemaking, “dry” has one specific meaning: the wine has very little residual sugar. That’s it.
Almost every red wine you’ve ever tasted is technically dry. That Cabernet Sauvignon, that Pinot Noir, that Barolo. All dry. A wine being “dry” doesn’t mean it lacks fruit flavor. A ripe, juicy Napa Cab can be explosively fruity and still be bone dry. Fruit flavor and sugar are not the same thing.
If what you’re reacting to is that gripping, drying sensation in your mouth, that’s tannin, not dryness. And if you find that unpleasant, you don’t dislike dry wine. You dislike high-tannin wine. Those are different conversations, and knowing the difference will change how you shop.
2. “I can’t drink wine because of the sulfites.”
This is the one that makes every winemaker sigh. Sulfites exist in wine. They’re added as a preservative and antioxidant, and they occur naturally during fermentation. The legal limit in the US is 350 milligrams per liter, but most finished wines contain around 50 mg/L.
Now here’s the part people don’t hear: Dried apricots contain 10 to 100 times more sulfites than a glass of wine. So do dried cranberries, raisins, and many processed foods. If you can eat a handful of dried fruit without a reaction, sulfites are almost certainly not your problem.
True sulfite sensitivity affects roughly 1% of the population, primarily people with severe asthma. The much more likely culprits behind wine headaches are histamines (higher in red wine), tannins, dehydration, or simply drinking too much. A Texas A&M enologist put it best recently: “I don’t know who came up with the idea to vilify sulfites, and I don’t really understand it.”
As a winemaker, I’ll add this: not using sulfites is actually more problematic than using them. Without SO2 protection, wine is more susceptible to spoilage from unwanted bacteria and oxygen, which can produce biogenic amines. Those compounds are chemically related to histamines and are far more likely to cause headaches than sulfites ever were.
3. “Look at the legs on this wine. It must be really good.”

Legs (or tears) are the rivulets that run down the inside of your glass after you swirl. They look elegant and people assume they signal quality. They don’t.
Legs are caused by the Marangoni effect. They’re a function of alcohol level and, sometimes, residual sugar interacting with surface tension. Higher alcohol wines produce more pronounced legs. That’s all they tell you. A $9 high-alcohol Shiraz from a hot climate will have more impressive legs than a $200 Premier Cru Burgundy at 12.5%. The legs on the cheap wine don’t make it better. They make it more alcoholic.
Next time someone swirls their glass and comments on the legs, smile and know that they’re observing a physics demonstration, not a quality indicator.
4. “Let it breathe. Just pop the cork.”
The idea is right. The execution is wrong. Opening a bottle and leaving it on the counter does almost nothing. The surface area of wine exposed in a bottle neck is roughly the size of a quarter. That’s not enough contact with air to make any meaningful difference, even after an hour.
If you actually want to aerate a wine, pour it into a decanter. Or just pour it into your glass and swirl vigorously. A good swirl in a wide glass does more in 30 seconds than an open bottle does in an hour.
And here’s the part even experienced drinkers miss: Not every wine benefits from aeration. Young, tannic reds (Barolo, young Napa Cab, Ribera del Duero) can soften and open up with air. But delicate aged wines, aromatic whites, and light-bodied reds like Pinot Noir can actually deteriorate with too much oxygen exposure. Decanting a 20-year-old Burgundy for an hour is a gamble you might lose.
5. “Red wine should be served at room temperature.”
This advice dates from an era when “room temperature” meant a drafty stone castle in France at 59 to 64 degrees. Modern room temperature in a heated house is 72 to 75 degrees, which is too warm for any red wine.
At 75 degrees, alcohol becomes more prominent, fruit flavors get muddled, and the wine tastes flabby and hot. Try this: put your next bottle of red in the fridge for 15 minutes before serving. You’ll notice the flavors sharpen, the structure tightens, and the wine just tastes more alive.
Light reds like Pinot Noir and Gamay benefit even more from a chill. Serve them at 55 to 59 degrees and they’re a completely different experience. This is the easiest upgrade you can make to your wine drinking and it costs nothing.
6. “Sugar-free wine is a healthier choice.”
This has become a huge marketing angle in the last few years, and as a winemaker, it drives me slightly crazy. It actually cost one brand points on our wine club review article. Here’s the thing: virtually all dry wine is already “sugar-free” in any meaningful sense.
During fermentation, yeast converts grape sugar into alcohol. A fully fermented dry wine has less than 4 grams per liter of residual sugar, which is negligible. Most dry wines are well under 2 g/L. When a brand charges a premium for “zero sugar” wine, they’re selling you a feature that nearly every dry wine already has.
The “sugar-free” label also implies conventional wines are loaded with sugar. They’re not. Unless you’re drinking an off-dry Riesling or a dessert wine (which are labeled as such), the wine in your glass is already essentially sugar-free. Don’t pay extra for a marketing claim when the $12 dry Grüner on the shelf next to it has the same sugar content.
7. “Old vines make better wine.”
Old vines can make outstanding wine. But “old vine” on a label is not a quality guarantee, and in most regions there’s no legal definition of what qualifies. In some cases, usually in Europe, “old vine” means 80 to 100+ years. In others, usually in a new world region like North America, a producer might slap it on a 25-year-old vineyard because it sounds prestigious.
What old vines actually do is produce less fruit and may bring some more interesting notes than a one dimensional teenager vine. Lower yields generally mean more concentrated flavors, which is the kernel of truth behind this myth. But a poorly managed, disease-riddled 90-year-old vine will make worse wine than a healthy, meticulously farmed 15-year-old vine. Vine age is one variable among dozens, not a shortcut to quality.
The Barossa Valley in Australia has some of the oldest continuously producing vines in the world, some dating to the 1840s. Those wines are extraordinary. But they’re extraordinary because of the combination of vine age, terroir, low yields, and skilled winemaking, not vine age alone.

8. “Screw caps are for cheap wine.”
This myth is dying but not dead. The reality is that many premium producers worldwide have moved to screw cap (Stelvin closure), and the reasons are entirely quality-driven.
Cork taint (TCA) aka nail polish aroma, affects an estimated 3 to 5% of all bottles sealed with natural cork. That means roughly 1 in every 25 bottles is compromised before you even open it. Screw caps eliminate that risk entirely. They also provide a more consistent seal, which means more predictable aging. New Zealand has essentially gone all-in on screw caps across all price tiers. Australia is close behind. Even Penfolds uses screw cap on several of their Bin series wines.
The romantic “pop” of a cork is nice. But romance doesn’t help when your $80 bottle smells like wet cardboard. If a winemaker chooses screw cap, it’s usually because they care more about what’s inside the bottle than the ceremony of opening it.
9. “Natural wine is healthier.”
There is no scientific evidence supporting this claim. None. Natural wine has lower (or no) added sulfites, which sounds healthier until you remember that sulfites aren’t the health concern people think they are (see myth #2).
What natural wine does have, in some cases, is higher levels of volatile acidity (the vinegar smell) and biogenic amines, both of which are more likely to cause headaches and adverse reactions than sulfites. The absence of SO2 protection means these compounds develop more readily. I’m not saying all natural wine is flawed. Cassie and I drink and enjoy it. But the idea that it’s categorically “better for you” than conventional wine is marketing, not science.
If you like natural wine, drink it because you enjoy the flavors, the farming philosophy, or the producers. Just don’t drink it because you think it’s medicine.
10. “You can’t pair red wine with fish.”

This rule exists for a reason, but the reason isn’t what most people think. It’s not about red versus white. It’s about iron.
Certain red wines have high levels of ferrous iron, and when that iron interacts with the unsaturated fatty acids in fish (especially oily fish like mackerel or sardines), it creates a metallic, fishy off-flavor. That’s the genuine problem. But not all reds are high in iron, and not all fish preparations trigger this reaction.
A light, low-tannin Pinot Noir with salmon is a classic pairing that works beautifully. Gamay with tuna niçoise is outstanding. Even a chilled, slightly tannic Cabernet Franc with seared swordfish can be great. The key is matching the weight and intensity of the wine to the dish, not reflexively reaching for white because someone wrote a rule about it 50 years ago.
Some of my best food and wine moments have been with combinations that happened by accident–not tried and true; looking at you lobster rolls and Viognier.
11. “Expensive wine tastes better.”
Multiple peer-reviewed studies have shown that in blind tastings, even experienced tasters can’t reliably distinguish expensive wines from moderately priced ones. In some studies, participants actually preferred cheaper wines when they didn’t know the price.
Price reflects many things: land costs, labor, barrel programs, yields, marketing, distribution, brand demand, and critic scores. All of these affect cost. None of them guarantee that you’ll enjoy the wine more than something at half the price.
Some of the best bottles I’ve ever had cost under $30. Some of the most disappointing cost well over $100. Price is information about the market, not about your palate.
That said, there is a floor. Below about $8 to $10 a bottle, you’re mostly paying for glass, labels, shipping, and distributor margins, which means the actual wine quality is constrained by cost. The value sweet spot is around $20 to $35, where you’re getting real winemaking decisions, not just packaging at a good price.
12. “Higher alcohol means the wine is from a warmer climate.”
Generally true, but not always. Chaptalisation, the practice of adding sugar to grape must before fermentation to raise potential alcohol, is permitted in many cool-climate wine regions including Burgundy, Champagne, and parts of Germany. A 13.5% Burgundy might have gotten there with help.
Meanwhile, some warm-climate producers are deliberately picking grapes earlier to keep alcohol down and preserve freshness. A 12.5% Grenache from Southern France doesn’t mean the climate was cool. It means the winemaker made a stylistic choice.
Alcohol level tells you what ended up in the bottle, not where the grapes grew or how warm the vintage was. It’s one data point, not a climate report.
What actually matters
If there’s one thread connecting all of these, it’s this: wine is full of confident-sounding rules that don’t survive contact with science or experience. The more you learn, the more you realize that the “rules” are really just starting points. The legs don’t tell you if the wine is good. The closure doesn’t tell you if it’s serious. The price doesn’t tell you if you’ll like it. The only thing that tells you whether a wine is good is whether you enjoy drinking it. Everything else is context.
Cassie and I have been fortunate enough to make wine, study wine, taste through thousands of bottles, and visit wine regions all over the world. The biggest thing we’ve learned is that the most interesting bottles often come from producers who ignored the rules in the first place.
