Over decades of winemaking and wine writing, Jesse and I have heard almost every misconception there is — from sulfites causing headaches to screw caps meaning cheap wine to red wine needing to breathe for an hour before you serve it. Some of these myths have a kernel of truth. Most don’t.

The Biggest Wine Myths — Busted
Here are a few of the most persistent wine myths we encounter, along with what the evidence actually says:
Myth: Sulfites cause red wine headaches. The evidence doesn’t support this. Dried apricots contain more sulfites than most wines. The more likely culprits are histamines, tannins, or simply alcohol — and drinking a big tannic red on an empty stomach while dehydrated. Most people who think they have a sulfite sensitivity don’t.
Myth: Screw caps mean the wine is cheap. This was true in the 1970s. It’s not true now. New Zealand Sauvignon Blanc and many of the finest wines from Australia, Austria, and Germany are sealed with screw caps because they’re better for preserving delicate aromatics. Top producers worldwide have made the switch.
Myth: Red wine should breathe for an hour before drinking. Pouring it into the glass and waiting ten minutes does most of the work. If a wine genuinely needs extended air exposure, decanting is far more effective than removing the cork and leaving the bottle on the counter.
